Last Minute Green Dinner for St. Patrick's Day

In case you are harriedly trying to come up with something green for dinner tonight, here's my super easy, quick, cheap, yummy solution to your challenge:

Cook 1 package organic pasta according to Directions
In saute pan combine 2 cloves fresh garlic, 3 tablespoons water, 4 tablespoons olive oil (make sure to add water before oil or you risk hot oil splashing), 2 leaves fresh mint or cilantro, two cups whatever green vegetable you have at home - broccolli, peas, kale, chard. Really, anything will work. Cook for three minutes on high stirring regularly. Let cool two minutes.

Puree vegetable mix with 1/4 cup cream or milk,

Pour over pasta and serve with grated cheese, pine nuts, a green salad, and apple juice with a slice of fresh green apple on the glass. Toast to St. Paddy!
